Potato-Apple Latkes

Servings: 8

Serve these delicous potato-apple latkes as one of your side dishes at your Hanukkah dinner. They will go well with almost any type of meat, fish or poultry.

2 large (4 cups) baking potatoes, shredded, 1 large (1 cup) Golden Delicious apple, shredded, 2 eggs, 1/2 cup all-purpose flour, 1/2 teaspoon salt, 1/4 teaspoon baking powder, vegetable oil, sour cream, if desired, honey, if desired

Stir together all ingredients except oil, sour cream and honey in large bowl. Heat 1/4-inch oil over medium-high heat in 10-inch skillet. Drop 1/4 cup potato mixture into hot oil, flattening each mound slightly. Fry, turning once, until crisply brown (6 to 8 minutes). Drain well on paper towels. Serve warm with dollop of sour cream; drizzle with honey, if desired. Makes: 8 servings (as a side dish).
